URSA is our Black IPA (or Cascadian Dark Ale, if that’s your preferred nomenclature). Briess Midnight Wheat and Weyermann Sinamar malt extract give this beer its black hue without contributing harsh, astringent or overly-burnt flavors. Malted spelt (a tasty ancient varietal of wheat) rounds out the mouthfeel and contibutes to a lush khaki head.
Cascadian Dark Ale is perhaps the preferred nomenclature for this beer given the prominent use of local, dried, whole-cone Cascade hops from Mighty Axe Hop Farm in the whirlpool. Post fermentation, a generous dry-hopping with Cascade and Equinox leave this beer with aromas of white pine resin and ripe tangerine. Bright, crisp pine flavors up front give way to a mildly tannic, dark chocolate-esque finish.
Named after the latin word for bear, it is our hope that this beer will conjure up thoughts of the northern night sky and provide fortitude for hibernation season.
